Working 6 days a week Monday – Saturday, starting anywhere from 5:00-7:00am (depending if we are in peak season or not) roughly 5hrs a day with a shorter day on a Saturday

Great opportunity for a Butcher to join our new meat production unit, based in Isle of Wight, for our Medina brand – part of Sysco GB. You’ll be preparing a variety of meat products such as prime steak cuts, chops and roast joints - boning, cutting and trimming into portions as per customer requirements. You'll be providing high-quality products as well as maintaining excellent standards of health and safety, food safety and HCAPP compliance. You’ll also support the training of our Butchery Operatives in basic meat trimming and meat preparation skills.
You will work alongside the small team of operatives to support a wide variety of tasks across the production operation. This includes using machinery to prepare meat to supply customer orders, picking orders, correctly packing and labelling meat products, storing products – both goods in from suppliers and finished goods from production, and cleaning equipment, tools and machinery. You’ll also be required to complete documentation – recording product temperatures and completing basic HACCP paperwork.
To join us in this role you’ll ideally be an experienced Butcher able to trim and portion various whole primal joints, with a track record of monitoring and achieving correct portion control for high end cuts such as centre cut fillet steaks. Alternatively on the job training can be offered for individuals who have keen interest in the food industry and will relish the opportunity to experience training in basic knife skills and the use of butchery machinery. You will be focused on quality and ensuring we produce the very best products for our customers. This is a varied role where you’ll be on your feet for long periods of time in a chilled environment, and there’s an element of manual handling - so you will need to be able to bend and lift to receive supplies, handle the meat products and store finished products.
